We went here on a Friday and we couldn’t eat meat due to Lent so they had lots of options. The Brie plate appetizer and calamari was a great combo and it made us full already. The salmon was great and just the right size. The tacos were flavorful but we had to take it home because we were full.
The service was fast and the menu was great because they had happy hour as well as discounted appetizers because we had an early dinner.
There was a dining area extending the restaurant but we opted for the area by the bar as that area had the discounted drinks and apps.
The server was knowledgeable and kind and we really enjoyed ourselves.
Left one star out of atmosphere because parking was annoying.

Union is an amazing restaurant! My family and I love to come in for happy hour, and when we found out that they serve brunch we had to check it out. They have a great selection of items, really good brunch drinks, and they are very affordable. On top of that, the atmosphere is always amazing, and the whole place is very inviting and welcoming. If you're looking for a brunch spot on the weekends in Castle Rock, this is the place to check out!

BIG THING:
Starting out, have come here for years and years since it opened. Tonight, noticed as I was signing on the bill- a secret “sneaky” 4% tip charge on the bill. Was never communicated and I bet, most of the patrons just sign their bill and now have tipped their server 20% plus this hidden 4%- so really now it’s 24% and we don’t even know if that makes it to the staff. It irked us as it was never communicated and disclosed and a last line item below our food ordered. We realized, we are tipping on top of a tip. This is frustrating and fair and had us leave on a frustrating note.
This should be communicated by the wait staff “ when you see the bill, there is a 4% fee added for our kitchen”- I love tipping and supporting service and work in the service industry too. The owner of Union needs to see this is WRONG and sneaky - I bet 90% of your customers have paid both and just not right. I hope this policy is fixed immediately and just either increase each food item by a small % - but don’t sneak in this charge. We have always loved coming here- great drinks, food , service but left tonight on a frustrating note. The manager said he has dealt with this often- well Union owner- needs to be fixed right away!
I know I’m sharing a lot on my feelings- but back and white transparency goes a LONG way! Hope next time I’m back in a few weeks- won’t see this again on the bill. 3 stars from 5 due to the lack of transparency.

Every single time I go, I am nothing less than bl9wn away by the amazing menu. The chef here is top notch and has a way with blending flavors and food genres that I never would expect. It's hard to walk out without trying a bit of everything. I fight the urge all the time to NOT tell people about this restaurant because I don't want to have to wait to get in... but I don't think I can keep it to myself anymore. If you are looking for Michelin star type food in a more affordable setting... look no further. This will forever be the "special place" I take the people I REALLY like.

Emily was amazing and took great care of our group. I loved my food and the drinks were great. The prices seemed a bit high but the sandwiches are worth it. We got the spicy bloody Mary and brie sandwich.

great experience My daughters wife suggested this place , as we were visting out of town . My husband and I . Service was excellent and even know we did not have a reservation. Manager was very accommodating and also the staff was knowledgeable about if u have a allergy to something , as my daughter has a food allergy . I had the mango chicken sandwich and it was excellent and husband had pulled pork . Love that it's local and has a quirky charm and not a chain type . and it seems the restaurant also cares about their BAH staff and FOH

Four of us met up in Castle Rock for a bit of shopping, eating and catching up. We asked a couple of ladies on the street where we should go for lunch, and they suggested Union. Great advice! Abby served us and made us feel so welcome. We enjoyed adult beverages and devoured our lunches.Two of us ordered the steak salad with tenderoin. Superb! Another friend ordered the Chicken Caesar and the fourth chose the beef flatbread. We ate every bite! Later Abby brought us a large piece of carrot cake for sharing. I can't say enough about the great dining experience, service and atmosphere we enjoyed! We will return.

I LOOOVE coming to Union! This place has been my go to spot for a nicer meal with friends or with family. I am a real big fan of the martinis and mussels. The wait staff has always been really friendly.

Came in today to try the brunch menu and I was absolutely blown away by how good the food was and how much we got for the prices we paid. Standouts were the Creme Brulee French and the Breakfast Flatbread.
