10/10 would recommend. Here for the weekend, recommended to try this fabulous new place by a great bartender next door (Matt). Wonderful vibes, clean fresh food with favor, fun wine list. Will return. Don’t sleep on this 💁🏼‍♀️

The best overall dining experience in the Arkansas Valley, no question. While the food and drink is top tier/special occasion worthy, the simple, clean ambience, fun energy and super friendly staff keep it accessible to anyone who might wander in. The wine list is the best in town and I think the only (or one of the only) glasses of biodynamic/natural wines you can get in town. Food is made to share—we ordered one main and tons of sides and it was a perfect way to eat a variety of the incredible menu. Everything was priced so reasonably. Salida has been waiting for a place like this and I can’t express how happy I am that Shavano opened!! I’ve already been twice. : )

I would rate this the finest dining experience in the valley. The food was delicious and so artfully presented. The ambiance was cozy and comfortable with the most beautiful woodworking in the dining room. I can't wait to take all my friends and visitors here.

Offering a perfect medley of fresh, locally-sourced ingredients, exceptional service, and a charming ambiance, this place will quickly cement itself as a staple in the community.

But let’s talk food—because this is where Shavano shines brightest. The menu showcases the best of what the region’s farms and markets have to offer. Every dish is a testament to quality and care, from the locally sourced trout and delicious salads, to the perfectly tender ribeye served alongside roasted root vegetables that taste like they were just pulled from the soil that morning. The apple dumpling dessert? Absolutely divine.

What truly sets Shavano apart is its ability to foster a sense of community. This isn’t just a place to eat; it’s a space to connect, celebrate, and feel rooted. The atmosphere strikes a perfect balance between buzzing energy and intimate comfort!

For vegetarians and meat lovers alike, the options are thoughtful and abundant. The staff here are warm, attentive, and incredibly knowledgeable; they’re quick to recommend wine pairings or suggest menu favorites.

Walking into Shavano feels like stepping into a warm embrace. The décor is a thoughtful blend of the 1909 building and modern simplicity, with a modern dining bar, wooden floating shelves filled with wine selections, and cozy lighting.

I recently had the pleasure of dining at Shavano and couldn't be more impressed by their commitment to quality, artisan, and community. I greatly appreciate and love their farm-to-table approach. Several dishes showcased the best of what our region/state has to offer, with ingredients sourced from local farms and suppliers. It's refreshing to see an interest and investment in supporting the community. The atmosphere is warm and inviting and I would highly recommend to anyone who appreciates good food, great people, and the opportunity to support local!

Best meal in Salida!!! Everything we ordered was fantastic and FRESH! Fun to order a bunch of things and share. The service was great, even with spring break crowds- you would never know they were a newer restaurant.

This is hands down the best restaurant in the region. Everything is so thoughtfully prepared and the food is all such good quality. Particularly for vegetarian and vegans, there are so many delicious options. The staff is so attentive and helpful - I can’t wait to go back.
