Love everything about Sabor de Vida. The food is amazing, love the red and green chili! Rice and beans are more than just a side to an entree, they are good enough to be an entree. Got the Chili relleno smothered Xmas style but still had the perfect crunch to it. Great people, great food, great community. Definitely recommend!

This is THE perfect hidden gem! We ducked in for a quick meal on our way through Colorado. The food rivals the best in our home town of KC! In fact, we begged them to come east! We dined on yummy chicken tacos and the best tamales!! Rice and beans were great and we loved the freshly fried chips with salsa! Thanks for a great meal!

Don't be fooled, Sabor looks like a small taco joint off the beaten path, but its SO much more. This is some of the best food in Colorado! Great dishes and even the sides were some of the best we've tasted. Also, they have a great range of menu items with some Italian and all American.

There exists, in the quiet and largely unexamined corners of Monte Vista, a small culinary establishment called Sabor, which—if one were to describe it in the reductive lexicon of the modern-day Internet review—serves “Mexican food.” This descriptor, while technically accurate, fails spectacularly to capture the full emotional and sensory totality of the experience, much in the way that calling the Pacific Ocean “water” ignores its hidden depths and terrifying, infinite complexity.

The burrito arrives, smothered (and yes, “smothered” is an apt verb here, suggesting not just coverage but a kind of deliberate, almost loving overwhelm) in a riot of red and green sauces. These sauces—like all truly good things—are clearly and unabashedly homemade. The red sauce, deeply complex, whispers of roasted chiles and something ineffable that might be familial nostalgia, while the green possesses a sharp, tangy brightness that cuts through the heft of the burrito with the precision of a well-honed blade. Together, they form a sort of culinary dialectic, each enhancing the other’s essential qualities while never quite subsuming them.

The burrito itself—stuffed to a point that suggests both generosity and a certain defiant disregard for physics—contains within it a perfect balance of textures and flavors. Beans that are creamy without being pasty, rice that is neither overcooked nor woefully underdone, ground beef that carry with it a depth of flavor indicative of long, slow preparation and (one suspects) an almost religious dedication to technique.
