The best place in the Roaring Fork Valley to get a deli sandwich, bagel and way beyond. Be ready to be impressed by the quality of food they source as well as the quality of people they employ. My favorite meal is the Gucci Lox (salmon lox) with coconut based cream cheese everything bagel - the bagels are fresh AF imported from NY in dough format I think. Not sure. They have several dairy free cream cheese options. 2nd choice is the grilled cheese with bacon and tomato. Cool local vibes on the beverage direction without the pretention that often comes with "local" and they have RAD dog eats to boot. Only Rec would be a better/stronger latte.

PRO TIP - park at Sopris Liquors if the front lot is full.

When I decided that I was going to be moving to Carbondale and the Central Rockies from the culinary Mecca of Northern California, I definitely wasn't expecting a Jewish deli in my new city, and certainly not one steps away from my home. So you can imagine my pleasant surprise when I saw one through the window of my U-Haul two days ago upon my arrival. Why it took me two days to get here is a question I'll continue to ask myself because Plosky's delivers and more! From the friendly staff to the comfy atmosphere to the AMAZING culinary treats, I can safely say I've never had a deli quite like this anywhere I've lived, let alone in the middle of the mountains. While I haven't tried their bagels yet, they look awesome in the display case and I'm sure I'll be taking a half dozen home with me next time. Whether you're a local like me or dropping by on your way to Aspen/Snowmass, you're doing yourself a disservice if you don't stop by Plosky's for a bite to eat. Trust me, you won't be disappointed!

It took them over 10 minutes to toast a piece of bread for takeout with a soup. I would’ve toasted it myself if it were going to take that long and it was hardly toasted. When I asked about the delay they said “maybe next time”
The bagels aren’t fresh either.

Update: regarding the owner’s response - my dog was outside when I asked the barista about the delay fyi. I don’t know what that has to do with toasting a slice of bread to go.

The best! My husband and I have always been a fan of Plosky's since it has opened. We used them twice to cater during our Wedding weekend - for getting ready and then also our Post Wedding Brunch that we set up at Marble Distillery. Great bagels, great spreads, great coffee -all of it! Thank you!

Dave is amazing! This is the best sandwich shop in town and the staff are so friendly! You have to try the Ruben sandwich on toasted bread. It’s a great sandwich! Please tie your pets up outside though because it’s a busy spot! Enjoy

Ordered Hey Mambo, basically an Italian w Mortedello as main meat. Fantastic! Peppers added a mild spice and I'm a wimp w hot stuff. Lots of veg and meat and sauce made for a great lunch. I ordered online with no issues around 1:30 pm.

Very nice staff. Me and my girlfriend tried polsky's for the first time .We had 2 hot sandwiches ,shared 1side .They also have a nice unique drink section non and alcoholic. Both sandwiches (hot pastrami on rye / Greek sneak) were outstanding and the side of pasta salad was also delicious . We will definitely be back .
