I work down the street and come here once a week. Never had a bad experience and I am picky when in comes to my BBQ since I spent 6 years in texas. Get their beans they are made from scratch and their brisket is my first choice if they run out then the pulled pork is still awesome. The sandwiches are large and usually save hafe for the next day or share with my wife so the price is pretty reasonable for the area.

This place serves the BEST BBQ I've ever had. The food is always consistently good, never missing a beat. Everything is packed with flavor and cooked to perfection. When they were in Canon City, it was our family's go-to spot – we indulged multiple times a month, and you simply can’t get sick of it. The prices are great, making it an amazing deal for the quality. The people are just as impressive – friendly and welcoming. We missed it so much that we recently made a three-hour round trip just to get some BBQ in Salida, and it was worth every minute! If you're a BBQ lover, you have to try this place!

PLEASE READ TO REFLECT STAR COUNT

EDIT I appreciate your response, however overworked and frustrated it may be.
During the last two days of the True Value- I visited your trailer three times, twice one day and once the other. As these were the first times I had visited, I am looking at everything- this includes the signs. There were no signs or announcements about the move posted. When I came back the last day of true value, there were no signs and when handed my food- told the gentleman (again) how much of a fan I was. Was told thank you but obviously not told anything about the trailer’s move. This is not the customer’s fault, period, whoever it is- me or someone else. To respond with such texted anger to someone who was not told by anyone what was going on, is WILD behavior. To also claim it “tanked” your rating is projecting. It went from a 5 to a 4.9 and like I stated the food is INCREDIBLE.

RECENTLY I discovered this place in Canon City. The people were so friendly and it was the most incredible pulled pork sandwich I have EVER had in my entire life. The food here is seriously amazing.

However, upon the selling of a True Value, it seems they just picked up and left. I understand, it’s a food trailer- it moves. I also understand it’s my right to voice how disappointed I am they’re now nearly an hour and ten minutes away.
When you’re a foodie this stuff is seriously heartbreaking!

Best food in this area! I have eaten at a famous BBQ place in Texas and numerous other BBQ joints there. Their food is over the top compared to these. Having withdrawals since you had to move to Salida but stopped by on our way through a few weeks ago and got our fix of delicious food! Will be making a special trip over there pretty soon. Looking forward to your new truck back in CanonCity!

The business owner was helpful and ensured we had our order for our BHE catering. The food is fantastic and mouthwatering. Highly recommend the Pork Belly Bites that are paired with a perfect sweet hot sauce, a melt in your mouth combo! To finish it off, make sure to get an order of their Banana Pudding dessert. I will be coming out of town to get a bite of this delicious BBQ!

I visited this food truck a few times after a day of working in Canon City. I read they're now staying in Salida for a while, and luckily, I live here! I'm a huge Texas BBQ fan, and their brisket does not disappoint. They are affordable, too. My new go-to whenever I eat out.

Now, this is what I call quality barbecue at a value. The brisket melts in your mouth, the ribs fall off the bone and the sides are awesome, especially the street corn! The owners are fantastic and very very nice. They helped with my choices and what they would recommend. They help out the community! All around great people and great barbecue! I recommend this to anybody who wants an excellent experience! 17 1/2 thumbs up👍
