We went to Guadalajara on Wilcox and what a disaster. It started off when my wife ordered her meal and she asked up front if there was BOTH chicken and cheese inside her enchiladas. She was told yes. I ordered the 2 tacos and enchiladas. Our meal came and one of my tacos was missing a big chunk. I told the waiter and he said oh, they must not have seen that and he walked away. Then my wife noticed NO cheese in her enchiladas and asked where it was to the waiter. He said he would get some and came back after she took her last bite with a scalding hot bowl full of cheese.

I pointed it out to a lady who said she was the owner and she said we should have said something to her vs the waiter and blew it off. Then the other supposed owner came over and said we should have said something (as I showed him the now harden cheese) and he said he had asked around and they do not recognize us as REGULARS and said sorry we did not enjoy and left.

We eat there maybe twice a year but after tonight we will never again. Not only was the food wrong and missing chunks but the entire attitude of the owners ( Miguel Toro and Antonio Amador) was that they could care less about the customer (I guess if we were more regular they would of by the way they checked with other waiters to see if they recognized us)

My recommendation for Castle Rock Guadalajara is I will never go there again and you may want to consider a different restaurant for your dinning experience.

Oh, if anyone knows of the two people I mentioned are the owners or not I would love to know if we were also lied to when we complained.

This is my favorite Mexican restaurant in castle rock. The service is always great and so is the food. Classic, good Mexican food - nothing fancy! And make sure you ask for the mushroom salsa - it’s my favorite!!

was driving to Denver and made a food stop at this restaurant, great choice!! right off I-25 fast service, open later. The portions are huge, and complimentary chips & salsa. the margaritas were good, nothing too fancy. Good parking, great service🩵

Most of the parking is a bit further away from the entrance, were you encounter a slight incline. Once you enter through the double entrance, be careful not to let yourself or your littles run into the fire extinguisher, to the left. Please wait to be seated, though I do not recall seeing a sign noting such. It looks like at certain times you might have to wait, but they have bench seating in the entrance area. Seating is to the left and right of the host stand. As we were seated on the right, one side is mostly all windows with brick underneath, while the opposite walls are yellow with brick arched "windows," painted orange, with hanging plants and iron work. Looking up you will notice ceilings that are partially shiplap and partially tile, decorated with twinkle lights, spoke wheel chandeliers, and star shaped balloons, which I believe were representing piñatas. The booths are maroon leather and busy fabric, with wooden edged tables that are designed with decorative tile on the outside (cream, pink, teal) and a large teal(ish) tile piece in the center. The other option for seating = tables with colorful chairs. The chairs have different carvings: toucan, senor and senorita dancing, hummingbird, macaw, sunflowers, etc.. The carpet had some staining, but overall the restaurant looked clean with some refreshes needed. Upon walking into the bathroom, you notice the color scheme from the tables was carried over to the bathroom walls. The women's bathroom does have a changing station and two stalls. However the sink is rusty and the mirror tattered. On each table you will find sugar packets, plus salt and pepper shakers. The kid's menu is hidden a bit in the regular menu, but it is there! While the servers were very attentive in the beginning, the service veered off by about mid-meal. They were all friendly and wore different colored button up shirts; some short-sleeved and some long-sleeved. I loved the fact that the children's drinks arrived in black paper Pepsi cups with straws/lids. Adults drinks were delivered in blue plastic Pepsi glasses. Happy hour is 2-5pm, with drink specials and I believe a special on super nachos. Though I didnt try the tacos, they looked tasty. The queso burrito had less flavor than expected, but the chicken quesadilla was huge and something you should try!

This place seems to be going downhill as far as the quality and authenticity of the food. I have lived here for 5 years and they used to be much better. But I just had one of the craziest tamales I've ever had in my life like bro could that masa be any more thick? And I know I'm spoiled because I used to live by Tamale Kitchen and they are a lot better at tamales obviously that's their namesake but I still think that this was probably the worst tamale I've ever had in my life. I also thought that apple chimichanga was kind of weird tasting. And the flan was unappetizing. But I do appreciate the large sides they gave us of guacamole and sour cream. And the churros were pretty okay. I don't know I am a bit disappointed I don't think I will order from them again. I don't think they're worth the price that you're paying they used to be but not anymore.

This place reminds me of the good things about where I came from, the food! Great service and great drinks compliment the Tex-Mex. Try the Ultimate Margarita 😉

I’ll add that I’ve been twice, now, once with a friend and once solo. I’m used to, when solo dining, being treated not as well. Definitely not the case here! They treated me very well, sat me quickly, and took my order as a solo while quite busy. Exemplary!

I LOVE the salsa. Please don't ever change the recipe. I get a large chips and salsa to go and bring it home and put the salsa in the blender. Makes it even hotter! Amazing. Chicken enchiladas are great too.
